You need to make sure your kitchen has everything necessary in it to limit fire risks - and there are many ways you can do this! A good way is by making sure there are no traces of grease because grease combusts easily; so when you clean your system, make sure you’re using TR19® Grease. Your system should also be cleaned at least once a year, depending on how much it’s used.
In order to keep the safety of people living or working in those buildings safe from fire, they need to take certain precautions such as having a working smoke alarm and sprinkler systems among other things.
To prevent fire in your building you can make sure all the safety equipment works by checking these every six months or annually depending on which country/state that you live in.

Apart from the fire risk, grease deposits are the perfect breeding ground for bacteria and insect infestations such as cockroaches. If kitchen ductwork is proven to be the culprit for the presence of these in a pub or restaurant you may be prosecuted by the HSE (Health & Safety Executive) under Health & Safety legislation or the Workplace (Health, Safety & Welfare) regulations.
Another very important passive fire prevention measure is the regular testing, cleaning and maintenance of fire dampers. These are metal louvres that can open and close and are installed across the ductwork to form a temporary barrier when closed but allow the free flow of air when open. You may not even be aware that your ventilation system has fire dampers, but they fulfil a very important function, so you must be sure that they are in working order.
In the event of a fire travelling through ductwork, the fire damper must close, to restrict the oxygen supply to the fire and create a barrier that slows the spread of the fire. This buys valuable time in which to safely evacuate shoppers, especially the more vulnerable and less mobile centre visitors.
There are different types of fire dampers; some are spring operated, some have fuse-links and there are other designs that are remotely operated. All types must be regularly tested, using a method known as drop testing, cleaned and maintained. According to BS 9999 guidance updated in early 2017, all fire dampers must now be tested at no more than twelve-month intervals.
